Southern Cooking Please Read

Southern Recipes have taken a life form of it's own, people are putting a twist on grandma's recipes and now cool restaurants are popping up all over the country offering great tasty dishes that have ingredients that you would of never though of adding.  Traditional southern dishes are still at the top of the list for many but not according to the food network.  Now it's a mix of cajun with a splash of comfort foods.  I love how people are reinventing themselves and they are not even chefs.  

This is not considered diet food, but great tasting dishes that anyone can do.  Appalachian dishes are now moving to the forefront with dishes like bread and butter pickles and sausage gravy.  Usually southern cooking represents one of these ingredients, chicken, cornbread, collard greens, mustard greens and sweet tea.  The smells will drive you crazy, you have to love the way people add to these simple dishes. 

Once a week we will be bringing you a recipe that has either just come out or is very popular.  Now these are NOT your normal southern quisines they are not from chefs but from people just like you that have a knack for cooking and getting things to taste just right.  How can people not like bacon, buttermilk biscuits and Virginia ham?  These have been the staples that the south uses daily, hey this ain't diet food it's gonna make your waistline big that's for sure.  But who the hell cares.  If these guys can make pickles a main dish and make them taste good I'm all for it!

The american south has had some influence on chain restaurants lately and they are popping up all over like cracker barrel and popeye's.  Church's chicken and Sonny's are also among some of the newer chain restaurants heading north.  Creole cuisine is still one of my favorites, it has the right mix of spices not to make it hot but flavor.  That's where I like to eat and being from the northeast it's impossible to get that cooking where I live.  France and fish are usually what makes up at least some of the dishes they offer in Louisiana and Mississippi.  They have perfected gumbo which is very popular.

Since easter is coming around the corner we wanted to give you a easy ham recipe that your friends and family will love.  

1 Preheat oven to 375°F.

2 Place ham, cut end down, in a large baking pan.

3 Mix pear nectar and orange juice in a bowl.

4 Bake ham for 15 minutes basting frequently with juices.

5 Mix brown sugar and honey together in a small bowl.

6 Brush mixture over ham and bake for another hour or until internal temperature reads 140°F.

7 Honey Baked Ham corporation uses a butane torch to caramelize the glaze to a crust.

8 The ham is placed on top of a huge metal drum covered with foil and caramelized.
